Yummy Edamame Hummus

Throughout the ages there has always been the employment of the wisdom of color to establish poise and harmony; to soothe and sustain; to heal and restore; to create anew! Enjoy!

INGREDIENTS

1 ½ cups cooked, organic shelled edamame bean
2 small cloves of garlic, minced
¼ cup fresh flat leaf parsley, chopped
¼ cup fresh basil & mint, chopped
3 Tbsp tahini
3 Tbsp fresh lemon juice
4 Tbsp unrefined olive oil
3 Tbsp water
½ tsp sea salt
½ tsp ground cumin
¼ tsp ground paprika
*Optional – add a few wild garlic mustard leaves!

INSTRUCTIONS

1) If using frozen edamame, defrost by running under hot water.
2) Combine all ingredients in a food processor. Blend until smooth.
3) Enjoy the dip with colorful, organic fresh vegetables or chips!

Makes approximately 2 cups
